Vineyard and terroir
The production area is Sambuca di Sicilia in the province of Agrigento. The warm, dry climate helps protect the fruit from rot and mildew. Constant winds arriving from Africa ventilate the vineyards and keep temperatures steady, while nearby Lake Arancio assists the vines’ access to nutrients and water during very dry periods. The resulting fruit combines freshness with balanced acidity.
Grapes
Nero d'Avola and Nerello Mascalaese. Percentages are not specified.
Vinification
The grapes are cut and left to dry naturally under the warm Sicilian sun and dry African wind. Once they have lost approximately 15–20% of their weight, they are pressed and fermentation begins on the skins. A long maceration follows.
Ageing
The wine spends 7–8 months in barriques.
Tasting profile
Deep, nearly opaque ruby red. The aromatic profile combines ripe red fruit and blackberry with oriental spices, pink pepper and leather. The palate is warm, powerful and pleasantly long-lived, with tannins balanced by natural residual sweetness and freshness.
Serving and pairing
Serve at 18°C. Suitable pairings include anchovies, goat’s cheese, grilled meat and vegetables, flavourful first courses, and substantial oven-baked fish dishes.
