Vineyard and terroir
The grapes grow across the broad Manduria area in Salento, Puglia, on red clay soils. Primitivo is moderately vigorous, ripens early and produces medium-low yields.
Grapes
Primitivo. The name derives from the Latin primitivus, referring to the variety’s early ripening.
Vinification
The grapes are destemmed and crushed, then macerated for 8–10 days at a controlled temperature with regular pump-overs. After draining, malolactic fermentation takes place in stainless-steel tanks.
Ageing
The wine matures for 6–8 months in used American and French oak barriques.
Tasting profile
Ruby red with dark violet highlights. The nose is intense, complex and fruit-led, showing small red fruits, cherries and blackberries. The palate is velvety, soft and warm, with noticeable tannins and persistent flavour and aroma.
Serving and pairing
Serve at 16–18°C. Pair with Mediterranean antipasti, first courses based on aubergine or mushrooms, meat and roast stew.
