Vineyard and terroir
The production area is Sambuca di Sicilia in the province of Agrigento. Its warm, dry climate helps maintain healthy fruit and reduces pressure from rot and mildew. Constant winds from Africa ventilate the vineyards and moderate temperatures, while nearby Lake Arancio supports access to water and nutrients through periods of severe drought. These conditions contribute fresh fruit character and balanced acidity.
Grapes
Nero d'Avola.
Vinification
The grapes are pressed lightly to avoid extracting green tannins. Maceration lasts approximately 10–12 days at controlled temperature, with the must pumped over every four hours.
Ageing
The wine matures for 4–5 months in French and American oak.
Tasting profile
A medium-bodied red with red cherry, juicy blue fruit, wild herbs, liquorice and dried rose petals. Nutmeg, vanilla, dark chocolate, coffee and a touch of cinnamon add complexity. The palate balances concentration with elegance, showing a fine texture, polished tannins and a fresh, mouthwatering finish.
Serving and pairing
Serve at 16–18°C. Pair with legumes, mushrooms and flavourful meats, or with Asian preparations such as duck, beef and pork hot pots.
