Abruzzo
The Pecorino vineyards surround Ortona on Abruzzo's Adriatic coast. They face west and southwest and grow on medium-textured calcareous clay soils.
Puglia
The Primitivo grapes grow across the territory of Manduria on red, clay-rich soils.
Sicily
The Sicilian vineyards experience a warm, dry climate that helps keep the fruit healthy and limits the risk of rot and mildew. A constant wind arriving from Africa ventilates the vines and moderates vineyard temperatures. Lake Arancio supplies an important local influence, helping the vines obtain water and nutrients during the particularly dry season and supporting freshness, fruit character and balanced acidity. Sambuca di Sicilia is the identified origin of the Nero d'Avola–Nerello Mascalaese blend.
Vinificazione
Cultivation varies by origin. Around Ortona, Pecorino is trained on the pergola system on west- and southwest-facing sites. In Manduria, Primitivo ripens early and produces medium-to-low yields. In Sicily, the warm, dry conditions help suppress rot and mildew pressure, while the regular African wind ventilates the canopy and moderates vineyard temperatures. Lake Arancio helps sustain the Sicilian vines through the dry season.
