Vineyard and terroir

The grapes are grown in Greve in Chianti, on soils with a predominance of limestone. Harvesting is carried out by hand.

Grapes

100% Trebbiano Toscano. Carefully selected bunches are hung to dry naturally for approximately three months in a room ventilated from the north, helping to avoid a substantial loss of acidity.

Vinification

The dried bunches are carefully selected before the whole grapes undergo gentle crushing. The must is clarified naturally and racked. Fermentation begins in steel and then continues in small kegs, where it may proceed for as long as two years.

Ageing

The wine matures for at least 36 months in individual 100 L kegs, followed by 12 months of refinement in bottle.

Tasting profile

Amber yellow with golden reflections. The fine, elegant bouquet presents pronounced notes of honey, dried grapes, walnut husk and dried fruit. The palate is balanced and lightly sweet, with flavours of dried fruit and aged honey.

Serving and pairing

Serve at 6–8 °C. Pair with Tuscan cantuccini or almond cakes.
