Vineyard and terroir

FSM comes from a steep, south-east-facing plot on the Castello Vicchiomaggio estate in Greve in Chianti. The vineyard lies at 255–265 metres above sea level and is planted at 5,000 vines per hectare, trained to single Guyot.

The heavy soil contains 30% clay and abundant stones. These comprise stratified limestone Galestro and the harder Alberese, both characteristic of the area. The yield is 20 hectolitres of wine per hectare.

Grapes

100% Merlot.

Vinification

Alcoholic fermentation takes place in steel vats, with approximately 30 days of skin contact. Malolactic fermentation is completed in oak barrels.

Ageing

The wine matures for 16 months in French barriques, followed by one year in bottle before release from the cellar.

Tasting profile

The colour is exceptionally dark, with blue-black nuances. The rich, evolving bouquet opens with concentrated raspberry syrup and black cherry, followed by layers of cedar, chocolate, herbs, graphite and forest-floor notes. Full-bodied and intensely flavoured, it has ripe, delicate tannins and a long, refreshing, balsamic finish.

Pair with richly flavoured main courses such as fillet with truffle or duck with orange.
