Vineyard and terroir
Guado Alto comes from a specific parcel on the Castello Vicchiomaggio estate in Greve in Chianti, selected for its soil and exposure. The site lies at 265 m, faces south and is open toward the west. Its heavy soil contains 30% clay and 18% loam, with abundant stones of stratified Galestro limestone and harder Alberese. The vines are trained to single Guyot at 5,000 plants per hectare.
Grapes
Sangiovese.
Vinification
Fermentation takes place in stainless-steel vats. Skin contact is limited to 5–6 days.
Ageing
The wine matures for about ten months in medium-sized 25 hl oak barrels.
Tasting profile
Bright ruby red, with aromas of red berries, tobacco leaf, gentle spice and carnation. The palate is full and warm, showing intense fruit, cherry nuances and velvety tannins. The long finish carries a suggestion of blueberry. The intended style is youthful, smooth, balanced and well structured, ready to enjoy upon release.
Serving and pairing
A versatile food wine, especially well matched with veal chops and mature pecorino.
