Ageing
The wine is entirely unoaked and remains on its fermentation lees for four months with bâtonnage, developing greater length, character and longevity.
Tasting profile
Bright straw yellow. The intense nose combines citrus, floral and herbal notes, including lime, orange blossom and thyme. Medium-bodied, fresh and savoury on the palate, with a saline accent. Further fruit nuances include kiwi and grapefruit. The wine has a firm profile on release.
Serving and pairing
Serve chilled but not iced. Pair with seafood and fish. It can be enjoyed for up to four years from harvest.
