Vineyard and terroir
The grapes come from Castello Vicchiomaggio in Greve in Chianti. The vineyards stand at 255–265 m above sea level on heavy soil containing 30% clay. Vines are planted at 5,600 per hectare and trained to single Guyot, with a yield of 52 hl/ha.
Grapes
Blend proportions vary by vintage. The latest published composition is 50% Sangiovese, complemented by Cabernet Sauvignon and Merlot in proportions that are not specified.
Vinification
Vinification takes place in 50 hl stainless-steel vats, with approximately 16 days of skin contact.
Ageing
The wine spends two years in new French oak barriques obtained from two different suppliers, followed by seven months in bottle before leaving the cellar.
Tasting profile
An opaque ruby-red wine with herbal and fruit-led aromas of mint, blackcurrant and blueberry, layered with dark chocolate, vanilla and juniper. The palate is full and enveloping, with highly polished, integrated tannins. A very long finish recalls blueberry and spice.
Serving and pairing
Pair with main courses featuring stewed or braised meat.
Label / history
Ripa delle More was created in 1980 as a departure from the rules of its era. It evolved from year to year into a modern Tuscan blend built around traditional Sangiovese and international varieties.
