Vineyard and terroir
The vineyards are located around Canosa di Puglia, between the provinces of Bari and Foggia in northern Puglia. Sandy and clay soils are influenced by breezes from the Adriatic Sea, which help the grapes retain delicate flavours and contribute freshness and persistence to the finished wine.

Nero di Troia.
Vinification
The grapes are gently crushed and destemmed, then macerated and fermented for 15 days. Pressing is followed by malolactic fermentation.
Ageing
Maturation lasts approximately six months. Two official language versions give different vessels: stainless-steel tanks in the English text and barriques in the Italian text.
Tasting profile
Ruby red with garnet highlights. The aroma is intense, persistent and fruit-driven. The palate is full-bodied and structured, with evident but balanced tannins and a fresh, persistent impression.
Serving and pairing
Serve at 16–18°C. Suitable pairings include robust first courses, roasted and red meats, and game. Grilled vegetables and pasta with wild-boar ragù are also suggested.
