Vineyard and terroir
The low-trained vineyards stand on volcanic soils along the slopes of Mount Vulture near Acerenza, Potenza, at elevations reaching 800 metres. The growing area is isolated and largely unspoilt.
Grapes
Aglianico.
Vinification
The grapes are harvested by hand in selected vineyards and sorted before gentle crushing and destemming. A five-day pre-fermentation maceration takes place at approximately 4–5°C, followed by fermentation at 22–24°C.
Ageing
The wine matures for ten months, with 60% held in stainless-steel tanks and 40% in used barriques. It then receives three months of bottle ageing.
Tasting profile
Bright red with violet reflections. Cherry and sour black cherry mingle with spice and vanilla on the nose. The palate has good structure and mature tannins, leading to a long, balsamic and persistent finish.
Serving and pairing
Serve at 18°C. Pair with slow-cooked rack of lamb, pappardelle with pork ragù, roasted meats or filet mignon.
