Vineyard and terroir
The grapes come from the La Canaletta vineyard at Fontanelle in the province of Treviso. Its silty clay-loam soil supports 25-year-old vines trained to Sylvoz and double arched cane systems at 3,000–4,000 vines per hectare.
Grapes
85% Glera and 15% Chardonnay.
Vinification
Harvest takes place during the first ten days of September. Vinification includes cryomaceration at 5°C, followed by secondary fermentation according to the Metodo Italiano.
Ageing
The wine spends four months on selected yeasts and then undergoes eight months of lees lysis in a temperature-controlled autoclave.
Technical data
Alcohol: 11%. Total acidity: 5%. Residual sugar: 0.6 g/L. Bottle format: 750 ml. First vintage: 2017.
Tasting profile
Intense and layered, with aromas of small white flowers and flint. The finish is dry and savoury.
Serving and pairing
Serve at 6–8°C. Pair with fresh cured meats, carbonara-style pasta, boiled white meats with sauces, or fresh soft cheeses.
