Vineyard and terroir

The vineyard is located in Castellinaldo d’Alba at 280 m, with a south-west to west exposure and sandy soil. It was planted in 1982 at a density of 5,000 vines per hectare and is trained to Guyot. Grapes are selected manually throughout fruit set, veraison and ripening so that only the best fruit proceeds to full maturity.

Vinification

Harvesting is manual, using small crates to avoid compressing or breaking the berries before processing. The crushed grapes undergo 12 hours of cold cryomaceration with dry ice. This extracts aromatic and colouring compounds, lowers the temperature and releases carbon dioxide to protect the must from oxygen. Alcoholic fermentation proceeds in a temperature-controlled stainless-steel autoclave at 15–16 °C with minimal oxygen contact. Subsequent operations are performed under nitrogen to preserve aromatic and colouring substances and limit sulfite use.

Tasting profile

Bright straw yellow with green reflections. The fresh, harmonious bouquet combines white peach and passion fruit with citrus and delicate, lightly vegetal nuances. The palate is intense, fresh and highly aromatic, balancing acidity and sweetness with ripe yellow melon, pronounced savouriness and increasingly mineral tones. Soft, persistent sensations and attractive citrus nuances shape the finish.
