Vineyard and terroir
The Cancor vineyards are in Cembra at approximately 500 m above sea level. The cool mountain climate and marked differences between daytime and nighttime temperatures preserve the grapes’ freshness and expressive character.
Vinification
The grapes are harvested by hand to keep the berries intact. After a short maceration, they are gently pressed as whole bunches. The must clarifies naturally before fermenting at a controlled temperature. Malolactic fermentation is avoided to retain freshness and crispness.
Ageing
The wine rests on its fine lees for three months in steel tanks, developing body while maintaining clean flavours.
Tasting profile
Bright and aromatic, with Gewurztraminer’s characteristic spice, expressive fruit character and a fresh, crisp profile that does not feel heavy.
