Vineyard and terroir
The vines grow across three vineyards in Cembra, at 350–550 metres above sea level, on porphyry-rich soils. Schiava remains widely planted in the Cembra Valley and occurs in most local vineyards. Because of the variety’s vigorous growth, the traditional Trentino pergola training system and careful pruning are used to control the vines and obtain quality fruit.
Grapes
Schiava is blended with 10% other red grape varieties.
Vinification
Fermentation takes place at a controlled temperature.
Ageing
The wine ages in stainless-steel tanks, followed by further maturation in the winery’s cellars after bottling.
Tasting profile
The nose is pleasantly fruity and vinous. The palate is fresh and smooth.
Label / history
The name Schiava is thought to derive from the practice of tying the branches so that the vine appears bound like a slave; schiava means “slave” in Italian.
