Vineyard and terroir
The vineyards are located at Contrada Zisola near Noto in the province of Siracusa, at 130 m a.s.l. with south-east exposure. Their medium-textured soil is calcareous and mineral. The vines are trained as traditional head-pruned bushes at a density of 5,550 plants per hectare.
Grapes
Grillo. Earlier releases included Catarratto, but the latest published vintage, 2025, is presented as Grillo without a stated percentage.
Vinification
The 2025 grapes were picked by hand from 26 August. Fermentation took place at a low temperature of 15 °C. The wine was bottled in March 2026 and released in April 2026.
Technical data
The 2025 has 12.50% alcohol and total acidity of 5.50 g/L. Production totals 42,000 bottles. Formats are 750 ml and 1.5 L. The first vintage was 2014.
Tasting profile
Aromatic and fresh, with floral and citrus notes. The palate is pleasantly dry and mineral.
Serving and pairing
Pair with light starters, seafood pasta and grilled vegetables.
Vintage notes
The 2025 summer was unusually rainy, including two separate 50 mm rainfall events that caused pauses during harvest. Harvesting at Zisola began with Grillo on 26 August. The conditions resulted in moderate potential alcohol and excellent acidity.
Label / history
Azisa, the word from which the name Zisola derives, also means “beautiful.” The name reflects the character intended for this organic Grillo-based white.
