Vineyard and terroir
The grapes are grown organically on clay soils in Colli Berici.
Grapes
The blend comprises 60% Cabernet Sauvignon, 20% Cabernet Franc and 20% Merlot.
Vinification
The grapes are harvested by hand from the last ten days of September to the first ten days of October, when fully ripe but still fresh. Cabernet Sauvignon and Cabernet Franc are pressed on the day of harvest. Merlot is dried for 20–30 days, reducing the berries’ moisture and concentrating their flavour and aroma. Fermentation takes place over 40 days in temperature-controlled concrete vats with wild yeasts.
Ageing
The wine matures in new barriques for at least 30 months, followed by a further year in bottle in the winery’s cellars.
Tasting profile
Powerful, rich and distinctive, with concentrated flavour and aroma, depth, a velvety texture, softness and spicy notes.
Serving and pairing
Pairs especially well with roasted or grilled meat and medium-aged cheese.
Label / history
The label’s strong lines and bold, clear colours reflect the character of the three grape varieties. The name’s numbers indicate their proportions in the blend. “Zyme” means “yeast” in Ancient Greek, while the winery’s pentagonal logo represents five elements of winemaking: people, vines, earth, sun and water.
Celestino Gaspari founded the winery and officially began producing wine in 2003. His interest in winemaking began in early childhood, and he later gained knowledge and experience at the Quintarelli winery after meeting his future father-in-law, Giuseppe Quintarelli. He subsequently established Zyme in the heart of Valpolicella Classico. The winery has a modern vinification building and a cellar carved into a sandstone wall.
