About this wine
Vineyard and terroir
The vineyards are in Salento, at around 100 m above sea level, and are planted at a density of 4,500 vines/ha. The mainly clay soils are fairly shallow. High average annual temperatures and low rainfall result in small, highly concentrated grapes.
Vinification
The grapes are harvested mechanically from mid- to late September. Temperature-controlled maceration is followed by decanting, alcoholic fermentation and gentle pressing.
Ageing
The wine matures in stainless-steel tanks for several months.
