Technical data, vinification, ageing and tasting profile
Grapes are hand-harvested from late August to the first days of September, pressed and held at 0°C for static settling. Fermentation occurs at 15–17°C in pressure-retaining vats, preserving carbon dioxide and the natural slight overpressure; the wine is bottled immediately. Approximately 4,000 bottles; yield 70 q/ha. Potential alcohol 12.5–13%, resulting alcohol 4.5–6.5% vol; dry extract 16–18 g/L; total acidity 5.3–5.6 g/L. Straw yellow with fine persistent perlage, varietal fragrance, delicate herbaceous and citrus notes, mineral balance and refined sweetness.
