About this wine

Vineyard and terroir

The wine comes from the 1.8 ha Pajè MGA, with south-west and west exposures. Its clay-limestone soil contains veins of sand. The contributing vineyards belong to Basso and Giordano. The site produces complex wines with good acidity and aromas of young, fragrant fruit.

Grapes

100% Nebbiolo.

Vinification

Fermentation takes place in stainless steel at 30°C, followed by 28 days of skin maceration. Malolactic fermentation is completed.

Ageing

The 2021 matured for 30 months in oak casks and nine months in bottle. The general production specification identifies 25–50 hl oak casks and a minimum cask-ageing period of 30 months.

Technical data

The 2021 was bottled in May 2025, with a production of 13,333 bottles.

Tasting profile

Pajè is bright and vertical, retaining its characteristic floral note and fresh fruit expression as it ages. The 2021 is complex, with intense, ripe red fruit, balanced tannins and a persistent finish. The vineyard character brings good acidity and fragrant, youthful fruit aromas.

Serving and pairing

Pair with pasta and risotto, white or red meats, and game. Cellaring potential is 30 years from the harvest.
