About this wine
Vineyard and terroir
The 2025 Soave, identified in the PDF as Soave Oasi San Giacomo DOC, comes predominantly from vineyards in Lavagno and Mezzane di Sotto at 150 m a.s.l. The sites face south-west and have mostly volcanic soils. Vines are Guyot-trained.
Grapes and harvest
Garganega. Manual harvest takes place between late September and early October.
Vinification and ageing
Grapes undergo cryo-maceration for 18 hours at 10 deg C. Fermentation is in stainless steel at 15 deg C for 8-10 days. The wine ages on lees for 4 months before bottling; the wine page also notes 2 months in bottle.

Vintage 2025. Alcohol 12.50% vol. Total acidity 5.55 g/l. Residual sugar 2.3 g/l. Dry extract 23.2 g/l. pH 3.30. Format: 750 ml.
Tasting profile
Bright straw yellow. Aromas include wildflowers, jasmine, pink grapefruit and citron. The palate is soft and fresh, with balanced minerality; the PDF emphasizes crisp acidity, white flowers, citrus and volcanic sapidity.
Vintage notes and pairing
The 2025 vintage was complex but favourable, with adequate winter water reserves, cool spring conditions, early summer heat and temperature fluctuations that preserved freshness. Pairings include saffron risotto, seafood spaghetti, grilled fish and chicken salad with fennel and oranges.
