Vintage notes and pairing
The 2025 vintage had adequate winter rain, a cool unstable spring, early summer heat, stable ripening conditions and late-season temperature fluctuations that preserved freshness and aromatic complexity. Pairings include sushi, sashimi, pasta with clams, vegetable and spice couscous, salt-crusted sea bass and sea bream with Mediterranean herbs.
