About this wine

Vineyard and terroir

The 2025 Valpolicella Classico is sourced mostly from Monte dei Galli at 180 m a.s.l. The vineyard faces south-east and has mixed soils with limestone and clay. Vines are Guyot-trained and average 21 years.

Grapes and harvest

Corvina Veronese and Rondinella. Manual harvest takes place in the second decade of September.

Vinification and ageing

Fermentation takes place in stainless steel at 25-31 deg C, averaging 9 days. The wine rests in stainless steel until mid-February and then ages two further months in bottle.

Technical data

Vintage 2025. Alcohol 12.5% vol. Total acidity 5.45 g/l. Residual sugar 2.7 g/l. Dry extract 26.8 g/l. pH 3.30. Format: 750 ml.

Tasting profile

An elegant aromatic profile of sour cherry, strawberry and violet. The palate is fresh and harmonious, with lively acidity and well-integrated tannins.

Vintage notes and pairing

The 2025 season was complex but favourable, with adequate winter rain, a cool unstable spring, early summer heat and later temperature fluctuations that preserved freshness and aromatic complexity. Served chilled, the wine suits pasta alla norma, roasts, grilled meats, seafood stew and Livornese cacciucco.
