About this wine
Vineyard and terroir
The vines grow on the island of Giglio, on small terraced vineyards overlooking the sea. The soils are rocky, sandy and acidic, rich in trace elements. All the vineyards lie right by the coast, on steep slopes with no roads or paths, so harvesting, transport and every other step is done entirely by hand. The wine is organic and made by traditional artisanal methods.
Vinification
The grapes are picked into crates around the second half of September and pressed as whole bunches. Fermentation is spontaneous, on the skins, in steel containers at the cellar's natural temperature. When fermentation is complete the wine is racked off the lees and then decanted.
Ageing
The wine ages in steel tanks until bottling, with racking three times a year. Bottling usually takes place shortly before the next harvest. Before bottling it is neither filtered nor given any chemical, thermal or mechanical treatment.

Decanting for 15–30 minutes before serving is recommended.
