About this wine
Vineyard and terroir
The grapes are grown on a friend's farm on the mainland. The vines average 35 years of age and occupy sandy, stony plots with a southwesterly exposure towards the sea. Trace elements in the soil and salty sea breezes settling on the grape skins contribute a saline, iodine-like character.
Vinification
The grapes remain in contact with their skins for 1–2 days before spontaneous fermentation.
Ageing
The wine matures in stainless-steel vats and ages further in bottle after bottling.
Tasting profile
Rounded and characterful, with distinctly saline and iodine-like notes.
