About this wine
Vineyard and terroir
The 5.5 ha Osso San Grato vineyard is owned almost entirely by the Antoniolo family. Its volcanic soil is rich in porphyry, and it has a fully southern exposure. The fruit comes from the vineyard’s highest and sunniest area, near the small villa known as Villotta, or Ca’Rossa. The vines average 60 years of age. Because the site is difficult to reach, all vineyard work is carried out by hand.
Vinification
The grapes are selected and harvested at full ripeness. They are gently vinified in a cement tank, with spontaneous fermentation and an 18-day maceration.
Ageing
The wine matures for 36 months in 25–30 hl Slavonian or French oak barrels, followed by one year in bottle before release.
Label / history
Production is limited to a small number of individually numbered bottles.
