About this wine
Vineyard and terroir
The vines are trained using the Guyot system at a density of 6,000–9,000 plants per hectare. Yields are 50–60 quintals per hectare, and harvest takes place in mid-September.
Grapes
The composition is determined by the character of each vintage, using the varieties that best express its potential. Exact varieties and proportions are not disclosed. The project explores the performance of both local and international varieties while pursuing production efficiency and territorial sustainability.
Ageing
The wine matures for six months in French oak barriques, followed by at least four months in bottle.
Technical data
Umbria Bianco IGT. The available format is 0.75 L. The first vintage was produced in 2012, and the stated ageing potential is 6–8 years.
Tasting profile
Straw yellow with warm golden reflections. The aromatic profile begins with anise and fern, then develops notes of citrus, vanilla and white pepper alongside mentholated and mineral nuances, finishing with acacia honey. The palate is rounded and soft yet fresh and delicately savoury, with exceptionally long persistence.
Label / history
Cuvée Secrète originated as a research project focused on production quality and experimentation. It was conceived as a comparison with the varietal expression achieved in other territories and as an exploration of the potential of local and international varieties in Umbria.
