About this wine
Vineyard and terroir
Vin Santo del Chianti Classico D.O.C. from Gaiole in Chianti, certified organic and made only in limited quantities.
Grapes
Trebbiano and Malvasia. Carefully selected bunches are dried in well-ventilated rooms before vinification.
Vinification
Fermentation proceeds with wild yeasts in small, sealed oak barrels. These barrels are kept in attic rooms where the wine experiences seasonal temperature variations.
Ageing
Seven years in sealed oak barrels. The wine page identifies them as oak barriques, while the technical sheet describes them more generally as small oak barrels.

Tasting profile
Brilliant golden amber in appearance, with bright copper reflections. The bouquet combines apricot and dried fruit with chestnut honey, toasted almond, and vanilla. Full-bodied, sweet, and rich on the palate, it retains freshness through vibrant acidity. Candied fruit, citrus, apricot, and dried fig shape the flavor profile, followed by a very long, persistent finish.
Serving and pairing
Serve at 12–16°C. Pair with traditional Tuscan desserts, blue cheeses, or liver pâté.
Vintage notes
Spring rains and a moderately warm summer supported balanced vine development in 2019. The fruit showed excellent balance and development, making this one of the finest harvests of the new millennium.
Label / history
A traditional Tuscan hospitality wine with roots in rural customs and religious rites; its name probably derives from the latter. Its style combines aromatic intensity and palate complexity with freshness that balances its rich structure.
