About this wine
Vineyard and terroir
The local soils contain abundant silica-rich stone known as ficiligno.
Vinification
The grapes are harvested by hand in three stages between late August and late September. The first portion is gently pressed; the second and third spend 24–36 hours in cryogenic tanks at 12 °C. A seven-day cold maceration takes place at a controlled 8 °C. Each portion ferments separately for 40–60 days.
Ageing
The wine rests in steel tanks. The separate portions are blended about one month before bottling.
