About this wine
Vinification
The grapes are harvested by hand from late August to late September, then destemmed and gently pressed. The Syrah (Shiraz) is macerated for 20–22 days, while the Merlot undergoes traditional fermentation at a controlled temperature. Malolactic fermentation follows.
Ageing
The wine ages in small oak barrels, combining new, second-use and third-use barrels.
Label / history
The name “Shymer” combines Shiraz and Merlot as an acronym. It also evokes “chimera”, the mythical creature symbolizing unattainable desires.
