About this wine
Vineyard and terroir
The grapes are grown in Asti, Piedmont.
Vinification
The grapes are harvested by hand and processed immediately. The must undergoes cold clarification for 16 hours at 10 °C, followed by fermentation at 16 °C. When the wine reaches 5% alcohol, it is chilled and fermentation is halted using a centrifuge. A second fermentation in tanks creates the sparkle, after which the wine is cold-stabilized, filtered twice and bottled.
