Bottega Vittorio Veneto

History

Development of the Vittorio Veneto holding

At a company convention held in Birmingham in July 2016, Sandro Bottega included new vineyards in Vittorio Veneto among the group's development projects, together with holdings at Bibano, Follina and Valgatara.

On 23 September 2017, a company delegation visited the Bottega vineyards at Vittorio Veneto and Follina. The visit focused on the two hilly winegrowing landscapes and concluded in Valdobbiadene.

Eno-Bee and biodiversity

In May 2022, the Vittorio Veneto vineyard became the setting for the Eno-Bee project. A population of 300,000 bees was introduced into the organic Glera vineyard to support biodiversity and provide an indicator of environmental health. Honey collected over the following eight months was used for a limited production of approximately 200 jars of summer Millefiori honey.

Opening of the winery

Bottega opened the small Vittorio Veneto winery in 2023. Known as Cantina di Via Vinera, it was conceived as a specialized facility for niche wines made by the ancestral and classic methods. Its modest consumption figures reflect the site's small scale: grid-electricity use was 432 kWh in 2022, 763 kWh in 2023 and 943 kWh in 2024, while mains-water use was 8 m³ in 2023 and 7 m³ in 2024.

By 2024–2025, Cantina di Via Vinera was included among the facilities that could be added to a visit to Villa Rosina by advance arrangement.

Terroir

The estate vineyard lies in the hills of Vittorio Veneto, in the province of Treviso, within a landscape that is partly wooded. The parcel is contiguous with woodland, a feature shared by Bottega's directly managed vineyards and incorporated into its biodiversity strategy. The vineyard is planted exclusively with Glera.

Winemaking

Analytical controlRaw materials, intermediate products and finished wines are monitored through internal and external laboratory testing.
Resource-conscious storageDocumented storage and sanitation procedures incorporate energy- and water-saving objectives.

The Vittorio Veneto property is cultivated organically and is part of Bottega's portfolio of directly managed vineyards certified under the SQNPI integrated-production scheme. The wider portfolio is either organically certified or progressing through organic certification.

Field operations are performed by contractors under the direction and supervision of Bottega's technical manager. Chemical weed control is excluded both between and beneath the rows. Spontaneous ground cover is encouraged and mown in alternating rows, while shredded pruning wood is returned to the vineyard to add organic matter and improve soil structure.

Soil analyses have shown no need for fertilization in the recent past. The vineyards have not been irrigated, although rainwater-harvesting projects are being studied. A plant-management plan coordinates expected production, bud load, shoot topping, leaf removal and bunch thinning. Yields are kept within the applicable production rules and aligned with the intended winemaking objectives.

Pest management follows integrated or organic protocols coordinated with the surrounding winegrowing district. Decisions combine meteorological bulletins with direct field inspections, while pest populations are monitored with pheromone traps to determine the appropriate timing of any intervention.

Ripening is monitored through vineyard inspections and laboratory analyses. Harvest dates are set according to the minimum maturity indices required by the applicable production rules and the intended enological use of the grapes.

Biodiversity is supported by the woodland adjoining the property, alternating-row mowing and the Eno-Bee project. In May 2022, 300,000 bees were placed in the organic Glera vineyard. Their role is to assist pollination, support the formation of fruit and act as a biological indicator of local environmental health.

The small Cantina di Via Vinera specializes in limited, niche wines made by two approaches: the ancestral method and the classic method. No further site-specific fermentation, maturation or bottling parameters are defined.

Across Bottega's wineries, production is organized through an integrated quality and food-safety management system. Raw materials, intermediate products and finished products undergo daily controls, performed both internally and through external laboratories. The resulting analytical data support production planning and continual improvement. Storage procedures are designed to conserve energy and water, while cleaning and sanitation follow documented operating instructions that are reviewed annually through internal and third-party audits.

Philosophy

Cantina di Via Vinera has a deliberately specialized role: a small winery devoted to niche wines rather than broad-volume production, using both an old production approach—the ancestral method—and the classic method.

Its agricultural management reflects Bottega's commitment to pairing wine production with protection of soil, natural resources and biodiversity. The practical expression of that position includes organic cultivation, the exclusion of chemical weed control, spontaneous vegetation, recycling of shredded pruning wood into the soil, non-irrigated farming, monitored pest management and the maintenance of bees within the vineyard.
