About this wine
Vinification
The grapes are hand-harvested into small baskets and transported to the winery, where vinification begins within 2–3 hours of picking. Gentle pressing produces a low yield. Both varieties undergo 12–16 hours of skin maceration, followed by fermentation at a controlled temperature of 15–16 °C. Secondary fermentation uses the Charmat-Martinotti method.
Label / history
Bottega created the Il Vino dei Poeti range of sparkling wines in 1992. The name translates as “the wine of poets” or “the poets’ little cellar.”
