About this wine
Vineyard and terroir
The selected fruit comes from a small plot at “Rive” di Combai in the Pre-Alpine area of Veneto. “Rive” denotes vineyards on steep slopes in small towns or villages. The terrain prevents the practical use of machinery, so all vineyard work is performed by hand.
The site has a moderate climate. The mountains shelter it from severe winds, keeping the winters cold but not excessively harsh, while cooling sea breezes temper the hot summers. Abundant summer rainfall supplies moisture during ripening.
The light, fairly shallow soils were formed through seabed uplift and subsequently shaped by rivers. They consist mainly of marl, sandstone, limestone and clay.
Vinification
Harvest takes place entirely by hand from mid-September to early October, with only the healthiest and ripest bunches selected. The grapes are gently pressed, and the must undergoes static settling at low temperature in steel tanks to remove substances that could cause heavy or unpleasant aromas.
The wine is produced by the Italian Charmat method. Secondary fermentation takes place with selected yeasts in sealed autoclaves at a controlled temperature of 14–15 °C. It is subsequently cold-stabilized, filtered and bottled.
Ageing
After secondary fermentation, the wine remains on its lees until clarification is complete, allowing yeast autolysis to contribute body, structure and aroma and to balance the sugar content.
Tasting profile
The soils impart a pleasant saline character and minerality.
