About this wine
Vineyard and terroir
The grapes are grown in Veneto in northeastern Italy, on alluvial clay soils. The Dolomites shelter the vineyards from cold northerly winds, while winds from the Adriatic Sea bring sufficient rainfall from the south, particularly in summer. Marked differences between daytime and nighttime temperatures support aromatic development.

The blend comprises 85% selected Glera, 10% Chardonnay and 5% Pinot Blanc.
Vinification
The grapes are generally harvested by hand in mid-September and taken immediately to the cellar to limit mechanical damage and premature oxidation. After destemming and gentle pressing, fermentation takes place in temperature-controlled stainless-steel tanks.
The wine is made by the Italian Charmat method. For the secondary fermentation, the base wine ferments with sugar and yeast in sealed autoclaves, preserving the grapes’ original aromas and developing fruity and floral characteristics. The wine is then cold-stabilized, filtered and bottled.

Label / history
The Accademia collection is named in tribute to the Venetian trading school Accademia degli Acquavitai, which operated from 1618 to 1806 and taught the crafts of winemaking and distillation. Its sparkling wines are presented in Venetian glass bottles in the colours of the rainbow.
