About this wine
Vineyard and terroir
Both varieties are grown in the commune of Noto, on white limestone soil. The wine is organic.
Grapes
A blend of Nero d'Avola, an Italian variety, and Merlot, an international one. The text gives no proportions.
Vinification
The grapes are harvested by hand. Fermentation takes place in concrete tanks.
Ageing
After fermentation the wine stays in the same concrete tanks for 8 months. It is lightly filtered and then matures in bottle for a further 3 months.
Label / history
The bottle is made of lightweight glass, closed with natural cork, and carries a label of recycled natural paper. The producer describes this packaging as having "zero environmental impact".
