About this wine

Vineyard and terroir

The grapes come from 4.80 hectares in Cissone, including vineyards on the Airali hillside at approximately 600 metres. This high-hill sector of southern Piedmont has stony, sedimentary calcareous-marl soils and a cool climate influenced by Alpine air currents. Pinot Noir and Chardonnay have been planted here since a regional research project began in 1990.

Vinification

The grapes are harvested by hand and pressed as whole bunches. Fermentation of the base wine takes place at a controlled temperature of 22°C. In April following harvest, the wine is bottled with yeasts for secondary fermentation by the traditional method.

Ageing

At least 36 months in bottle on the lees. Liqueur d’expédition is added following disgorgement.

Tasting profile

Intense yellow with golden highlights and a fine, persistent perlage. The pronounced bouquet evokes bread crust, nuts, dried figs and honey. Soft and savoury on the palate, with harmonious balance and substantial structure. The style is elegant, complex and long-lived.

Serving and pairing

Serve at 8–10°C. Suitable as an aperitif and with fish dishes, pasta, risotto and fresh cheeses.

Label / history

Airali takes its name from the Cissone hillside where the vineyards are planted. The first production year was 2013. Alta Langa is released only as a vintage-dated wine made from a single harvest.
