About this wine
Vineyard and terroir
Produced at Cascine Drago. The harvest is timed for normal technological maturity, seeking a balance between acidity and structure instead of the earlier picking often used to retain greater freshness in sparkling-wine grapes.
Grapes
90% Pinot Nero and 10% Nebbiolo.
Vinification
A traditional-method sparkling wine. Secondary fermentation takes place in bottle. After disgorgement, the bottle is topped up with the same wine, without the addition of liqueur d’expédition.
Ageing
Fermentation and maturation in bottle continue for at least two years before disgorgement. The structure of Pinot Nero and Nebbiolo gives the wine physical presence and an aptitude for ageing.

Alcohol: 12.5% vol.
Tasting profile
A complex, rich, persistent and refined bouquet of bread crust, white flowers and aromatic herbs. Very dry and vinous on the palate, with an important yet elegant structure. Its full body harmoniously rounds the sharper edges of the acidity.
Serving and pairing
Serve at 8–10°C. Suitable as an aperitif, but intended especially as a wine for the whole meal.
Label / history
The wine takes its inspiration and name from Pietro Colla, father of Beppe and Tino and grandfather of Federica and Pietro. After learning bottle fermentation from a practitioner trained in France, Pietro spent his career making traditional-method sparkling wines for prominent cellars of his era.
