About this wine
Vineyard and terroir
The Cabernet Sauvignon grows in clay and sandy soils along the shores of Lake Caldaro, at 230 to 280 m above sea level. Caldaro lies in Alto Adige, Italy's northernmost wine-producing province. Wine was made here before the Romans arrived, and some evidence suggests local winemaking may go back to the Iron Age. It developed further in the Middle Ages through the care and work of monastery staff. The combination of climate and geography of the area provides the foundation for top-quality red wines. The vines are trained on the Guyot system.
Vinification
The grapes are harvested at optimal ripeness. Fermentation takes place in stainless steel tanks for 15 days at a controlled temperature of no more than 28 °C. Malolactic fermentation occurs naturally.
Ageing
The wine ages for 12 months: 50% in stainless steel tanks and 50% in French oak barriques.
