About this wine

Vinification

Made using the traditional Tuscan governo method: dried, partially raisined grapes are added to the must after the first fermentation. This practice dates back to the Middle Ages, although it was gradually abandoned with the advent of long-ageing Tuscan wines; Castellare di Castellina later revived it.

Ageing

Aged for four months in steel tanks, followed by two months in bottle. The wine is ready by spring.

Tasting profile

Soft, lively and easy to drink.

Serving and pairing

Pair with warm fish or meat dishes. It may also be served well chilled as a refreshing summer drink.
