100% Cabernet Sauvignon.
Vinification
Fermentation takes place in stainless-steel fermenters at 25–28°C, with pump-overs and délestage.
Ageing
The wine matures for approximately 18 months in 225-litre French-oak barriques.
Technical data
The 2022 vintage has 15% alcohol.
Tasting profile
A complex aroma combines small red berries with tobacco and liquorice. The palate is soft, with sweet, elegant tannins. Balanced and persistent through the finish, the wine has substantial ageing potential.
Serving and pairing
Serve at 16–18°C. Pair with meat-based first courses, roasted or grilled meats, and medium-mature cheeses.
Vintage notes
The 2022 season was marked by drought from late winter through much of the summer. A series of storms beginning in mid-August supplied timely water during the crucial ripening period. Cabernet Sauvignon responded well to both the initial water shortage and the later rainfall, ultimately reaching optimal maturity.
Label / history
In Etruscan tradition, a dèinos was a spherical ceramic vessel used at banquets to hold the most precious wine reserved for solemn occasions. Its broad shape allowed the wine to release its richness, making it a symbol of sharing and celebration. The label carries a gold filigree design inspired by the techniques and symbols of Etruscan goldsmiths. Dèinos represents the highest expression of Banfi’s Bolgheri project.
