About this wine

Vineyard and terroir

The fruit comes from the Pomino vineyards in the Florentine mountains, where vines grow at elevations reaching 700 m above sea level. The high-altitude setting allowed the grapes of the 2019 vintage to benefit from sunny days alternating with cool nights, preserving health and balance through to harvest.

Vinification

The wine follows Pomino's historical production method. The grapes undergo prolonged drying, concentrating the fruit while retaining the freshness needed to balance the finished wine's sweetness.

Ageing

Maturation lasts seven years in small wooden barrels. This extended period in wood contributes to the wine's intensity, complexity and broad aromatic range.

Tasting profile

The 2019 is radiant gold to amber in colour. Its complex bouquet moves from ripe fruit to almond and hazelnut, followed by candied apricot, mango and orange; the orange character reinforces the impression of freshness. Cinnamon supplies the spicy dimension. The palate balances acidity and sweetness, combining softness, savoury character and warmth before a long finish.

Serving and pairing

A meditation wine suited to biscuits, pastries, soft creams and puddings. Savoury pairings include foie gras, mature cheeses and strongly flavoured blue cheeses. Large glasses are recommended.

Vintage notes

The winter preceding the 2019 growing season was relatively dry, and budbreak began early with the first warmth at the start of April. During the first half of the month, all vines developed abundant buds and shoots. Temperatures then fell well below the seasonal average; May was the coldest and wettest of the preceding decade, delaying flowering until the second ten days of June. Conditions reversed in June, with little rainfall and high temperatures initiating a long, hot season. At elevations of up to 700 m, the vines benefited from warm, sunny days and cool nights, maintaining healthy, balanced grapes until harvest.

Pomino Vin Santo expresses a Tuscan tradition through the combination of Pomino's terroir, local grape varieties and a historical production process. Prolonged grape drying and extended maturation in wood shape its characteristic balance of sweetness and freshness and its identity as an intense, complex meditation wine.
