Vineyard and terroir
The grapes grow on the shores of Lake Frassino, in the heart of Lugana. The soils have a high percentage of clay, which helps the grapes develop a high sugar content. Yields are kept very low to give healthy grapes with high sugar content.

Vinification
Harvest is by hand in late September. The grapes are destemmed and gently pressed. After natural settling, the must ferments for 10–15 days at 16 °C.
Ageing
The wine rests on its lees until bottling.

'L Lac marks the return of the Piona family to Lugana. Luciano, founder of Cavalchina, once owned an estate on the shores of Lake Frassino, but his son Giulietto sold it to expand the La Prendina estate. His grandsons Franco and Luciano decided to return to Lake Frassino and bought 'L lac, an estate in the heart of Lugana. The winery focuses on single-variety wines that show the strengths and distinctive character of the terroir as clearly as possible.
Azienda Agricola Cavalchina was founded at the beginning of the 20th century, when the Piona family bought its first vineyards in the village of Custoza in Soave. The family later named its wines after their region of origin, Custoza, rather than Soave. Cavalchina's approach rests on three pillars: the local terroir, careful vine management and precise vinification. Varieties are chosen to suit climate and soil, and yields are kept low so the berries remain healthy and juicy.
