About this wine
Vineyard and terroir
The vineyards lie at 300–350 metres above sea level with a northeastern exposure. The soils are mainly marl and red earth; the area's red soil is also mixed with white chalk. The fruit has very low pH and high acidity. Yields are deliberately kept low.
Vinification
The grapes are harvested into small wooden trays and left at an altitude of 300 metres to dry naturally in the local climate until they reach the desired condition. Traditional fermentation uses remontage and délestage. It proceeds slowly because of the low temperature and high sugar content. After several days of skin contact, the wine is transferred to small barrels.
Ageing
The wines from the barriques are blended in a large cask and aged there for about one year before bottling.

Refined, well-balanced and exceptionally elegant, with pronounced acidity and the capacity for long ageing.
Label / history
For centuries, Torre d'Orti appeared on maps of San Martino Buon Albergo as the name of a hillside area near Marcellise. Castello di Montorio built a watchtower on the site for defence. The land was later used by local farmers to grow olives, grapes and grains. After acquiring the former watchtower estate, the Piona family retained its historic name and planted vines there.
