About this wine
Vineyard and terroir
The fruit comes from the estate’s vineyards in Bardolino, planted at 120–140 m on south-facing slopes. The soils are limestone-and-clay moraine mixed with gravel. The grapes ripen very late, and yields are deliberately kept low.
Vinification
Harvest usually takes place in mid-October. The grapes are destemmed and pressed immediately after picking. Fermentation is temperature-controlled at 25–28 °C, falling to 18–20 °C toward the end. The must is pumped over and undergoes daily délestage, followed by malolactic fermentation.
Ageing
The wine rests in medium-sized barrels for about one year. It is bottled in early autumn and continues maturing in the winery’s cellars until November.
Tasting profile
The late-ripening grapes have a delicate structure and give the wine a rich character that reaches its fullest expression only in certain years.
