About this wine

Vineyard and terroir

Selected grapes come from small vineyards in Valle di Cembra and Valle di Non. The sites are supported by the estate's technical team and form part of a quality and varietal-experimentation project. Vines are trained partly on the simple Trentino pergola and partly by Guyot, on clay-loam soils.

Grapes

100% Sauvignon. The variety bears smaller-than-average cylindrical, winged bunches with golden-green berries, firm and moderately juicy pulp, and a lightly aromatic flavour.

Vinification

After harvest, the grapes receive a brief maceration and are gently pressed immediately. Fermentation takes place at controlled temperature with selected yeasts.

Ageing

Maturation follows in stainless steel.

Tasting profile

Straw yellow, sometimes with greenish reflections. The distinctive, delicate and aromatic bouquet combines nettle, liquorice, white peach, elderflower and gooseberry. The dry palate is lightly acidic and full-bodied, with a persistent aromatic core, good structure and a long, fresh, mineral-edged finish.

Serving and pairing

Serve at 12–14°C and open at the time of service. Enjoy as an aperitif or with vegetable- and herb-based gnocchi and first courses, fish risotto, mixed fried fish, spaghetti with clams, cured meats, grilled mushrooms, nettle gnocchi and Trentino-style asparagus. Best within two to three years.
