About this wine
Vineyard and terroir
Selected white grapes come from the estate’s vineyards in Montepulciano, in the province of Siena.

Vinification
The grapes are softly pressed. A long, slow alcoholic fermentation proceeds at a controlled 12–14°C to retain aromatic concentration. The wine then remains on its fine lees for three months. At bottling, liqueur de tirage is added to initiate the slow second fermentation associated with the traditional method.
Ageing
Three months on fine lees precede a second fermentation lasting at least 24 months.
Tasting profile
Intense straw yellow with golden reflections. Floral aromas are joined by bread-crust notes. The palate is full, with a fine and persistent stream of bubbles.
Serving and pairing
Suitable as an aperitif and with fish-based starters, vegetables, cheeses, shellfish, or pasta and risotto prepared with fish or vegetables.
Label / history
Cerrus was the first traditional-method sparkling wine produced by the Tenute del Cerro estates, created to express selected white grapes from Fattoria del Cerro’s vineyards.
