About this wine
Vineyard and terroir
The grapes come from vineyards in the municipality of Montepulciano that fall within the Pieve Sant’Ilario UGA. Sant’Ilario is one of the twelve additional geographical units identified through the Vino Nobile di Montepulciano zoning project. The historical term pieve recalls the territorial divisions used from the late Roman and Lombard periods onward.
Grapes
100% Prugnolo Gentile (Sangiovese).
Vinification
The grapes are harvested in September and fermented in stainless-steel tanks. Maceration lasts approximately 15 days, followed by malolactic fermentation.
Ageing
The wine matures for a minimum of 12 months in both small oak vessels—barriques and tonneaux—and large casks. It is then returned to stainless steel for finishing, bottled and aged for at least another 12 months before release.
Tasting profile
Intense ruby red tending toward garnet. The nose is complex and ethereal, with ripe red fruit and sweet spices. The palate combines excellent concentration and structure with notable length and elegance.
Serving and pairing
Serve at 16–18 °C in medium-sized wine glasses. Pair with red meat, game and long-cooked dishes, including preparations with spices; it also suits pasta with rich sauces.
Label / history
The wine is conceived as a highly selective expression of a specific Montepulciano zone and is made in limited quantities. The Pieve project originated within the Consorzio del Vino Nobile di Montepulciano through collective research and participation by the denomination’s producers. The first release presented by Fattoria del Cerro is the 2021 vintage.
