Vineyard and terroir

Sangiovese comes from Montepulciano in the province of Siena.

Grapes

Sangiovese.

Vinification

The grapes are softly pressed. A long, slow alcoholic fermentation takes place at a controlled 12–14°C to preserve aromatic concentration. The wine remains on its fine lees for three months. Liqueur de tirage is added at bottling, initiating a slow second fermentation.

Ageing

Three months on fine lees precede a second fermentation lasting at least 24 months.

Tasting profile

Pink with violet reflections. The bouquet centres on red fruit, particularly raspberry and cherry. The palate is full, with depth and richness, while the perlage is fine and persistent.

Serving and pairing

Suitable as an aperitif. Its depth and richness also accommodate white meats and pizza.

Cerrus Rosé was created to demonstrate the versatility of Sangiovese in the Montepulciano area.
