About this wine
Vineyard and terroir
The grapes grow in the hills of Acquaviva di Montepulciano, Siena. Drying takes place in the spacious attic of Podere Argiano, where ventilation and humidity provide suitable conditions for keeping the fruit sound until pressing in January.
Grapes
Trebbiano Toscano and Malvasia Bianca.
Vinification
The bunches are picked by hand and laid on reed mats in well-ventilated rooms. They dry during autumn and winter until the required concentration is achieved. In January, the dried grapes are pressed and the resulting must is transferred to small oak caratelli for alcoholic fermentation.
Ageing
Fermentation and maturation take place in the oak caratelli, where the wine remains for three years.
Tasting profile
Distinct aromas of apricot, peach, fig and dried herbs lead to a dense, sweet palate sustained by persistent freshness.
Serving and pairing
Pair with desserts and biscuits, mature goat’s cheese, blue cheese or foie gras.
Label / history
Golden bunches resting on reed mats through the autumn and winter are a lasting image of Tuscan wine culture. Fattoria del Cerro preserves this traditional method by dedicating the attic of Podere Argiano to the drying of its hand-picked Trebbiano and Malvasia grapes.
